- 1 tablespoon olive oil
- 1/2 lb smoked sausage cut into 1/4-in slices
- 1 large onion, chopped
- 1 cup chopped bell pepper
- salt to taste
- 1/2 teaspoon Cajun Seasoning, or to taste
- 1 cup uncooked rice
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 3 bay leaves
- 1/4 teaspoon dried thyme leaves
- 1 lb shrimp peeled and deveined
DIRECTIONS:
- Heat olive oil in pot over medium heat. Stir in sausage and cook 2 minutes.
- Add onions, bell pepper & season with salt & Cajun seasoning.
- Cook and stir until vegetables are soft (6-8 mins).
- Stir in rice until evenly coated in the vegetable mixture.
- Pour in tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves.
