Sausage & Shrimp Jambalaya



I found this recipe ages ago and have been my base for making Jambalaya.
 
INGREDIENTS:
  •  1 tablespoon olive oil
  • 1/2 lb smoked sausage cut into 1/4-in slices
  • 1 large onion, chopped
  • 1 cup chopped bell pepper
  • salt to taste
  • 1/2 teaspoon Cajun Seasoning, or to taste
  • 1 cup uncooked rice
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 tablespoon minced garlic
  • 2 cups chicken broth
  • 3 bay leaves
  • 1/4 teaspoon dried thyme leaves
  • 1 lb shrimp peeled and deveined
 DIRECTIONS:
  •  Heat olive oil in pot over medium heat. Stir in sausage and cook 2 minutes.
  • Add onions, bell pepper & season with salt & Cajun seasoning.
 
  • Cook and stir until vegetables are soft (6-8 mins).
  • Stir in rice until evenly coated in the vegetable mixture.

  •  Pour in tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves.
 
 
  • Bring to simmer over med-high heat
  • Reduce to Med-low and cover
  • Simmer for 20 mins
  • After 20 mins, stir in shrimp and cook uncovered for 10 mins until shrimp turns pink & no longer translucent 

  • Remove from heat and let stand for 5-10 mins
